Great and easy little Cupcake tip

Homemade Gumdrops

  • 4 tablespoons/6 envelopes of unflavored gelatin
  • 1 cup of cold water
  • 1 1/2 cups of boiling water
  • 4 cups of sugar
  • 1/4 tablespoon of different flavored extract(lemon, cherry..)
  • 1-4 drops of food coloring
  • extra sugar for coating

Add gelatin to cold water to soften then add sugar and boil. Pour mixture into pans(there are special pans for gumdrops but use whatever pans you have on hand) and add a little bit of flavored extract. Also, you will want to add a few drops of food coloring to them, so be creative and go crazy!

After you pour your mixture into pans you need to let them chill overnight so they can set.

The next day, create cube shapes or even hearts and sugar them up......then wait again for the drops to crystallize. This step will take a few days.

  • 1 cup of granulated white sugar
  • 3/4 teaspoons of vegetable or canola oil

Place cupcake liners in cupcake pans. In large bowl, whisk together cake mix, flour, sugar and salt. Add remaining ingredients and beat with hand mixer for 2 minutes or until well blended.

Pour mixture into liners, fill about 3/4 full. Bake about 18 minutes and check with toothpick to make sure the centers are fully baked.

*Duncan Hines have reduced the size of their boxes now so if needed use Pillsbury or Betty Crocker instead for 18.25 ounces.

*You can use either regular or light sour cream for this recipe, but heck since it is a wedding (cup)cake and you want it to be delicious and as possible, I recommend going for the full fat kind.*Add teaspoon or almond extract in addition to vanilla, if you wish to have a different flavor.

*You can use this recipe to make a cake, just pour the mixture into a greased and floured pan(s) and bake until done.

Butter a 3-quart casserole dish; set aside. Place bread pieces in a medium bowl. In small saucepan over medium heat, melt 2 tablespoons butter.  Saucy Asian Meatballs Recipe

Meatball Ingredients:

  • 2 lbs. ground pork or ground beef
  • 2 tsp. sesame oil
  • 1 cup Panko or breadcrumbs
  • 1/2 tsp. ground ginger
  • 2 eggs
  • 3 tsp. minced garlic
  • 1/2 cup thinly-sliced green onions
  • optional garnish: toasted sesame seeds, sliced scallions

Asian Sauce Ingredients:

  • 2/3 cup hoisin sauce
  • 1/4 cup rice vinegar
  • 2 garlic cloves, minced
  • 2 Tbsp. soy sauce
  • 1 tsp. sesame oil
  • 1 tsp. ground ginger

Preheat oven to 400.

In a large bowl, mix together meatball ingredients until well-combined.

Shape into balls (I made mine about 1.5 inches, which yielded about 35 meatballs, but 1 inch is probably standard), and place on a greased baking sheet or in a 9×13 baking dish.  Bake for 10-12 minutes, or until meatballs are golden on the outside and no longer pink on the inside.

While the meatballs are baking, whisk together all of the sauce ingredients until blended.  Once meatballs have finished cooking, you can either dip each meatball individually (using a toothpick) in the sauce mixture.  Or you can pour the sauce over the meatballs and gently stir them until covered.

Serve warm with dipping sauce.
